Cajun Butter Marinade Recipe

A good marinade can make or break a British BBQ. If you really want your food to pop, a marinade is what you need to turn bland chicken, pork, or beef into juicy, buttery betterness.
What will I need?
- 250g Anchor butter, softened
- 2 tsp Cajun seasoning
- 1 tsp smoked paprika
- 2 tsp brown sugar
- Big pinch of salt & pepper

How to make a BBQ marinade
- Throw all ingredients into a bowl and mix! There's no messing about with this one step belter.
Making the marinade is simple– the difficulty is deciding how you want it to taste! The beauty of our spicy butter marinade is that all you need to do is mix your ingredients in a bowl and bam – you’re done! Plus, if you prefer different herbs and spices, you can use Anchor butter as your foundation and go crazy with your own flavour creation.

The marinating bit
If you’re running low on time, you can marinate by simply grabbing a pastry brush, dipping it in your marinade, and slathering it over your meat and veg on the BBQ, letting it settle in for around a minute before turning and marinating the other side.
If you have a little more time to prepare, you can make sure your meat really soaks up all that lovely flavour by placing it in the marinade overnight. Simply lay your meat in a bowl and pour over the marinade, rubbing it slightly to make sure it’s totally covered. Then cover your bowl with cling film or a bowl cover and leave it to have a lovely spicy seasoning bath overnight. This method is super effective for marinating chicken for the BBQ, as chicken can take longer to absorb the flavours.
